Rolled shoulder of lamb
ONE ROLLED SHOULDER OF LAMB 10 / 12 lbs
SALT & PEPPER TO TASTE
HALF CUP OF WATER
TABLE SPOON OF OIL YOUR CHOICE
GAS MARK 3 / 163c
COOKING TIME 4 / 5 HOURS
Take lamb shoulder wash in cold water place in roasting tin drizzle oil over meat salt and pepper add water to roasting tin do not cover place in oven at gas mark 3 leave for 4 / 5 hours to see if meat is cooked skewer meat with probe if there is a resistance continue cooking for a little more time until no resistance remove meat from oven and rap in triple tinfoil shiney side in over stand for 2 / 3 hours keep meat juices for gravy serve with vegetables of your choice.
